The reflection…

Hi again. Welcome back.

I decided to take a step back and reflect on my blog and how it has evolved in this short space of time.

Upon creating this blog, I had numerous people disagree with its title.. saying that I could in fact cook. Although flattered, I didn’t quite believe them.

Having said that now, merely 6 weeks down the track, I realise that they are in fact correct.

Let me enlighten you in on a few facts about me:

  • I am a perfectionist
  • I am exceptionally stubborn
  • I put 1000% effort into every task I set out to achieve
  • I have very high expectations of myself

What this blog has encouraged me to do is to

Step outside of my comfort zone

Each week, I have continuously challenged myself with new recipes to show you, that it can be done. You don’t need to have confidence in the kitchen to create healthy, tasty meals.

Let’s take last week for example:

I decided to throw a Christmas dinner party for 16 of our nearest and dearest friends. I’m talking a 3-course sit-down-dinner kind of event.

Am I crazy?

Perhaps.

I decided the menu was to consist of:

Entree:

  • Antipasto

Main:

  • Lamb smoked on the barbecue
  • Sausages smoked on the barbecue
  • Pale ale and honey glazed ham
  • Roasted pumpkin and pickled beetroot salad
  • Charred corn and spelt salad with miso dressing
  • Roasted potato and leek salad
  • Roasted carrots and potatoes

Dessert:

  • Rhubarb and apple tart
  • Trifle consisting almond cake, mascarpone, peaches and sparkling moscato jelly
  • Lemon and almond shortbread

Seems rather straightforward right?

I wasn’t kidding when I said I was stepping outside my comfort zone.

Somehow, amongst a lot of angst, a few expletives and a few glasses of wine, I managed to get this on the table for my guests alongside the help of my wonderful husband.

Don’t get me wrong, at times I was completely overwhelmed in the kitchen and lacked confidence in my cooking ability and the flavour profiles of the food.

But at the end of the day it finally dawned on me that..

 

I can actually cook

 

When I put my mind to it, dedicate the right amount of time for the task, follow a recipe almost meticulously.. I am more than capable of achieving the desired goal.

So perhaps a more apt title for my blog is:

The emerging dietitian who thinks she can’t cook but when given the right circumstances can cook.. sometimes

Maybe I’ll just stick with the title I’ve got but I think you understand my point.

I am a very basic cook. I wish I didn’t have to follow a recipe and just knew what flavours worked with each other. But I don’t and I’m working with what I’ve got to hopefully inspire you too.


Handy hint:

I’ve started purchasing food magazines for inspiration for this blog such as Delicious Magazine and Gourmet Traveller. I have been pleasantly surprised at the depth of flavour of the recipes and how easy they are to replicate. Their websites are great too. See here and here.
