Happy Valentine’s Galentine’s Sunday folks.
Now I’m not one to buy into Valentine’s day all that much. Don’t get me wrong, I absolutely love love. I only have to hear about how your Uncle’s, best friend’s, cousin’s, wife’s, neighbour met their spouse and I get emotional.
However I much prefer to celebrate love on all 365 366 days of the year.
Having said that – I do indulge in it – just a little bit. Because I really just love love.
Today marks Alex and my first Valentine’s Day as husband and wife. Sadly we actually spent it apart. The moment I finished work, he started work. It is what it is.
So after I finished work, I met up with my lovely friend and fabulous Galentine, Sam who graced me with a bunch of flowers, a smoothie and a walk date and an all in all wonderful afternoon #ilovelove.
I returned home to find a beautiful card and 1 2 3 bunches of flowers [not roses – I’m rather picky with flowers, alongside fruit oddly enough] from my wonderful husband #feelingloved #ilovelove #igotemotional.
A few weeks ago I had purchased some scrapbooks from Kikki K with the intention of creating a heart felt gift. Life got in the way really. I seriously don’t know where the time went.
I decided to create another gift from my heart. So cookies it was.
I raided my rather sparse pantry and discovered a packet of wholemeal spelt flour. I had purchased this with great intentions but sadly had never known what to do with it been adventurous enough to try it.
Well folks – google is a wonderful invention.
I stumbled across a recipe for:
Chewy oatmeal raisin cookies

Adaptations to the recipe:
- I substituted raisins for sultanas. 1/2 – 3/4 of a cup is plentiful
- I added 1/2 cup of desiccated coconut just for fun [Add this in alongside the oats to the wet mixture]
Handy hints:
- Roll the cookies into a small ball. I thought I was being quite dainty. These cookies expand a lot. So my seemingly dainty cookies are now very generous cookies.
- As they expand, make sure you leave plenty of space between the cookies
Serves approximately 20 generous cookies.
